Just to be clear, not a cafe, just my Grandma. She’s achieved all the major points I wish I could when it comes to baking-your-own BB: it’s got some good height and has risen properly with an even consistency (mine always tend to be stodgier towards the bottom), it’s deliciously moist and has a good level of sweetness. It’s very hearty and loaded with coconut, oats and (interestingly) pine nuts. The pine nuts add a bit of an unexpected crunch, so initially I was like “Hmm I don’t know about that”, but flavour-wise, they actually really work! Grandma has baked a very unique, and legitimately good BB that I would be happy to receive in any cafe. Unfortunately I don’t know what specifically makes it a Louisiana BB… I was hoping it might contain bourbon, but it doesn’t, so I suggest you have some on the side and make it a Louisiana BBnB.
