Where the hell did this place come from? In the tiny little shed which is Kirribilli Wharf, Celsius has managed to fill every square inch with seriously upscale cafe. My breakfast was their signature “Smoked Salmon by the Wharf”, a decadent benedict-style dish: smoked salmon and a perfectly poached egg on fantastically soft sourdough with salmon roe that just popped with flavour and an amazingly complementary assortment of greens. It looked and tasted spectacular. But, big downer: no cocktails. With a meal like that, and a location like this, a glass of fresh sparkling white (or at least a mimosa) is essential. My flat white, however, was freaking awesome. Ona beans, executed perfectly. Yep. Celsius know what they’re doing.

But wait, what about the banana bread? Baked in house, served alternatively like an oblongishly horizontal slab of cake rather than your traditional “bread” shape, with a spongey and moist texture and a beautiful fresh banana flavour.

When exactly did this become a place on Sydney’s cafe radar? I’d never heard of it before now, and yet at 11am on a Tuesday in the middle of winter, I was outside waiting for a table. Celsius Coffee Co is a tiny little diamond literally floating on Sydney Harbour, and although it’s suitably casual and not liquor-licensed, it is literally “on the water”, with waves splooshing beneath you. I can’t believe I was only waiting 5mins.
